The two issues that need to be addressed here are:

Paul's Jesus was a figure that he encountered only in his visions, not a physical being in his actual life (sometimes called the Cosmic Christ). This was therefore something of a 'mythological' figure. This may have influenced his portrayal of Jesus in his letters.

The gospels, according to the scholarly consensus, were written later. Paul's thinking may have been a strong influence on them.
