I agree with your conclusions. It's unlikely that Jesus spoke Greek, no obvious need to.

I also don't think that he was a carpenter. However, it seems unlikely to me that he was any kind of workman. If he was actually descended from King David (as the gospels assert), and thus the apparent heir to the throne, it's hard to see how the family's fortunes could have sunk so low, unless it was a deliberate ploy to keep them in hiding.
