“We will never understand the fundamental nature of the Universe. We will only ever gain a partial one, based on what we can perceive”. That is true, almost by definition, if we rely upon classical physics and the associated philosophy of materialism. Even with quantum physics, we have Wolf saying something similar. If we go beyond that, however, and use the insights gained from spiritual teachers via whatever means [e.g. clairvoyance], then we can at least improve our understanding.

“We know that the mind is somehow inextricably linked with the brain...” I would say 'closely associated' rather than 'inextricably'. Out-of-body experiences are evidence [proof?] that the linkage is not absolute.

“Perhaps we're looking in the wrong places...” Or rather, perhaps we're making the wrong assumptions.

“Science takes a materialistic view because, for the most part, it's role has been to improve our material circumstances”. I think that's too simple a view. I think the underlying commitment to atheism is a highly significant factor. Also, the requirements of the scientific method almost force physicalism to be adopted.

“For the majority of us, there are far more important things to deal with than these high-falutin questions about consciousness, purpose and meaning”. You're lucky that you're content with your life as it is. Some others among us have found deeper satisfaction and enhancement of the joys of life by becoming interested in these questions.
